I was born and raised in Madrid, Spain. I moved to Manhattan in 2018 with my brave 8 year old son to marry my middle school sweetheart. During the pandemic, I felt unwell, my cholesterol spiked, and I knew something had to change. I dove into nutrition and threw away all the ultra-processed food at home. I stopped ordering from delivery apps and went back to eating the way I did as a child, the Mediterranean way — fresh, whole foods, low sugar or practically none and the daily use of extra virgin olive oil. The results were transformative: better energy, improved health, and a need to spread the joy of cooking healthy and delicious food.
How my Journey began
I got my food handler’s license and began catering in New York City, sharing Spanish healthy dishes with clients who were amazed at the difference organic produce and real olive oil made. The success of my dishes spread mouth to mouth and from one day to the next, I was organizing catering events and parties for up to 180 Guests. After 3,5 years, I became inspired to become a certified Olive Oil Sommelier and source oils directly from regenerative family groves in Spain.

I’m Olivia, a Spanish-American, cook, olive oil sommelier, and founder of Olivia LaBomba Olive Oil. Through my career as a private and corporate chef and Spanish caterer in New York City, I realized one ingredient always stood out: real, extraordinary extra virgin olive oil. That’s why I created Olivia LaBomba Olive Oil—to bring pure single source, high-quality mono-variety, early-harvest EVOO straight from Spanish groves to your kitchen.
I created Olivia LaBomba Olive Oil to share what I believe is one of the purest expressions of culture: real extra virgin olive oil. Harvested from Spanish groves I know and trust, our oils are bold, vibrant, and made using regenerative practices that honor both the land and the people who work it.
This project is deeply personal. For me, olive oil is more than an ingredient—it’s a connection to memory, heritage, and wellness. I launched this brand to help you fall in love with EVOO, knowing how it heals, where it comes from and who it supports.
